Okay, so you want to make your own wine but are a bit intimidated by the thought of it. I’ve written this guide in the hopes of giving aspiring vintners a simple and easy approach to growing some grapes and making their first wines for the sole purpose of raising their oenology score. For the most part, I have intentionally stayed away from explanations and rationale. There are also many aspects about winemaking that I have intentionally omitted. The objective here is to keep things as simple as possible. I hope you find this guide useful.
Step 1 – Consider joining The Egyptian Viticultural Association (EVA) in order to ask questions and swap grapes.
Step 2 – Make some wine barrels. I would suggest at least 11. Also make at least 11 glass jars.
Step 3 – Acquire some vine cuttings. 10-20 or so should be fine. I would suggest using either one of Gada’s excellent crossbreeds such as Gada 168 (The One Vine), or Honey Rose as both generate 2 sugar/day. If you can’t get them don’t get upset! For your purposes any cutting will do.
Step 4 – Establish two separate grape growing locations. For your first growing location build about five vineyards close to your home compound. They can all be right next to each other.
Establish your second grape growing location as far away as practical. Is one of your waypoints far from home? If not, (or if you want to save waypoint time) set it up near a chariot stop in a different region. If you live way out in the boonies far away from your expedition site you can use that. Again, build 5 vineyards at the remote location. Place a cutting on each of the 10 vineyards as you build them.
Step 5 – You have now built your vineyards in two well-separated locations and placed the cuttings on them to start growth. Come back in 12 hours or so and take a cutting from each. Do this once or twice simply to replace the cuttings you have used.
Step 6 – Forget about them for a week.
Step 7 – Okay, now you’re ready to actually grow some grapes. Keep it simple! Fertilize each vineyard with a fish of any kind roughly 5 or 6 hours apart. Example: I get up in the morning and fertilize them all around 6 or 7 am, again when I come home at lunch (Noonish), again when I get off work (5 or 6 pm), and when going to bed (10 or 11 pm). This is not the optimal schedule, but I refuse to adjust my life around virtual grapes. Do this fertilization routine for about a week (or until you just can’t stand it any longer) and you should have a decent amount of grapes in no time! Don’t worry about watering or pruning. Obviously fertalizing is more easily done if you have a mule at the remote location, or it's done as a guild effort.
Step 8 – Harvest your grapes from your home base growing location and place them in a chest at your compound. KEEP ALL OF THE GRAPES FROM THAT GROWING LOCATION IN A SEPARATE CHEST AND RECORD WHERE THEY WERE GROWN! Example: You have five vineyards at your home compound. After you harvest them place them all in the same chest and label the chest “Grapes from here”, and write down the name of each batch of grapes on some paper. All of those grapes have the exact same flavor and need to be kept separate from other grapes. Go to your remote grape location, harvest them all, haul them back, and place them in their own chest. What we want to do here is keep control of each separate growth area.
Step 9 – Determine the flavor and residual sugar of your grapes. Take 50 grapes from one of the growing locations, crush them in a barrel, seal it, and take a sample. Record the Residual Sugar (RS). Even though you don’t need high RS grapes for yourself, you want your grapes to have 10 RS or higher so that they can be traded with experienced vintners.
Don’t wait to let your tester wine ferment, go ahead and bottle it as soon as you have determined the RS. Give the glass jar of grape juice to a player with a high winetasting score to sample for you. He can tell you the specific and detailed flavor for that batch of grapes. Repeat this process separately for each of your two growing location and record the results.
The key to keep in mind throughout this whole process is that we only care about three things about our grapes: Location grown, RS, and flavor. Take as many notes as needed to keep track of this and chest management in order to maintain order. THERE IS NOTHING MORE USELESS THAN TONS OF GRAPES THAT YOU HAVE NO IDEA WHAT THEY ARE.
Step 10 – Do your first real grape crush. Okay, you have at least two totally separate batches of grapes from a good distance apart whose characteristics you have determined, and 11 wine barrels. Grab 225 grapes from location one and 225 from location two. Place them in the barrels in ratios of 5. Example: 50-0, 45-5, 40-10, thru 0-50 so that you have eleven unique ratios. Crush, seal, and forget about them for 24 hours.
Step 11 – Bottle your wine and serve to six friends on a wine tasting table with fine glasses. Use a public one if you don’t have one of your own. 24 hours is long enough to get the wine to alcohol level 6 or so which is sufficient for anyone with an oenology score of 140 or less.
Step 12 – Acquire some different grapes (at least 450) grown at a third location by begging or swapping from somebody else. This gives you at least two more grape crushes by blending these third location grapes with your grapes from the two locations you already in stock in the manner described in step 10. After these two crushes you can experiment with multiple grape blendings, different ratios, and just play around if you get more than 450 from the swap.
Step 13 - Attend wine tastings by others and bring along some of your wine. If you are going to a wine tasting that have people with high oenology scores allow your wine to ferment until it has 10% alcohol. That takes about 5 days to get wine to alcohol 10%. The alcohol level can be determined by taking a sample from the sealed barrel at any time.
You receive permanent perception points at 7, 49, and 243 oenology. It’s easy to get to 49. 243 takes a lot of work and commitment.
Making wine takes some effort, but the pleasure of helping your fellow Egyptians raise their oenology score is very satisfying! Have fun!
