The basic idea that the spreadsheet uses is best shown by example. Consider Eggplant and Nature's Jug.
Eggplant has stats 1/0/0/1/0/-0.9/-1 and Nature's Jug has stats 0/0/-0.89/-0.9/0/0/1. When the foods are cooked with 13 eggplant and 1 Nature's, eggplant's weight of 5 is the same for all stat values, but Nature's Jug stats are weighted at 3 for 0/0/0/-0.9/0/0/1 and 5 for 0/0/-0.89/0/0/0/.
