Estimated Ideal Values
Based on data from past tales, a tree's fruit is determined by taking the sum of the squares of the differences between the tree's attributes and each fruit's ideal attributes. (Much like how paint colours work).
Those fruits with the most extreme values in a category will tend to be the more difficult to get, especially if you also want the attribute that is higher or lower still (for example, Reddish Mandarin will be harder to get than Greenish Mandarin, Tangy Lime will be harder to get than Sweet Lime).
Below are ideal calculated values. To become a specific fruit, the tree's 4 stats together need to be closer to Fruit A than any other fruit so there will be crossover of stats (ie., a tree's color could be closer to Fruit A, but the other stats bring it closer to Fruit B, so it shows as Fruit B.)
Highlighted are the fruits with the Highest (purple) and Lowest (yellow) ideal values for each attribute category. However, due to the starting attributes of the default fruits, fruits with low color and sweet values tend to be easier to get than fruits with high color and sweet values. In general, Mandarins, Tangerines, and Summerbells are considered the most difficult fruits to get in an orchard.
