Lexington Dip (used as a finishing sauce for barbecue chicken or pork) 1-1/2 cups cider vinegar (can use white) 10 tablespoons catsup salt to taste (around 1tsp should do it) 1/2 tsp cayenne pepper 1/4 tsp (or less) hot pepper flake (it will get hotter as it sits) 1-1/2 tablespoons sugar 1/2 cup water 1/2 tsp ground pepper (to taste) Combine all ingredients in a sauce pan and simmer until everything blends and dissolves (about 10 min) Remove and cool 4 hours Use sparingly on meat

Sweeter version 1/2 gallon cider vinegar 1/4 + 2 tablespoons salt 1 tablespoon cayenne pepper 1 cup firmly packed brown sugar (can sub with 1/2 cup molasses)

Combine and simmer 10 min...allow to cool 4 hours before using. (makes 1/2 gallon)

Western style 1 cup catsup 1 cup brown sugar (or 1/2 cup molasses) 1/2 cup lemon juice 1/4 cup grated onion 1 tsp (or to taste) hot sauce (I like smoked chipotle Tabasco) 1 tsp Worcestershire sauce Combine and bring all to boil...turn heat to low simmer for 30 min and cool for 2 hours This is a good mop sauce for ribs, chicken etc
